An Oracle Apps DBA is someone who, in addition to dealing with the Oracle RDBMS, also manages the Oracle E-Business Suite of Applications, a rather large ERP package consisting of some 196+ modules (including the financials modules such as General Ledger, Accounts Payable etc).
You can buy the media packs for Apps 11i from the Oracle Store for a small cost (about $50 or so I think), but be warned, it is not for the faint hearted. Depending on the O/S you choose, the CD Pack for 11.5.9 (and 11.5.10 which was released last week) comes to about 54 CDs. The Windows and Linux versions are about 36 CDs for the "Rapid Install", and the Tru64 Unix version was 47 CDs.
All the documentation you need is included in the CD Pack. Your best source of information is Oracle Metalink.
Thankfully the installation is much easier then in the past, so you can get something like the "Vision Demo" Environment up and running relatively easily. For a person who has never used Apps 11i before, I suggest having a looking at some basic overview documentation to give you the big picture.
