I use rman backups for a very large database somewhere in the area
of 3.5 Terabytes. We run a full hot backup on Sunday and and an incremental
on wednesday. Never had any problems. And the reason we run an incremental
is the full takes around 24 hours, and once a week is not often enough to
run a backup and 2 fulls in the same week is not pratical on resources.

RMAN works great, and I'm sure the incremental functionality works too, but
why?
I wouldn't use incremental backup unless it meant no backup at all. Why
complicate you life this way. Recovery is complicated and stressful enough
with a simple (logic) backup solution. "incremental" only servers to
confuse a stressful situation, recovery!
RMAN cons;
Using a catalog database or the controlfile as the catalog. Old style HOT
file backups are logically simpler, but I take RMAN any day.
It can be as simple as doing an export.
