This is not possible nor desirable, due to potential inconsistencies, as you
surmised. Take a look into Log Shipping and/or Replication in Books Online.

Hi list,

I have two SQLServers, same Release, same Patch-Level. One of them is my
production server, the other my backup server. What I like to do is, to copy
nightly the datafiles from production to backup. I want to have my
production online when I copy the datafiles. Backup will be offline. Is this
possible or will there be some inconstencies?
